1 Year Cheddar
The milk for this farmstead cheddar comes from a single herd of Brown Swiss cows and is left unpasteurized before being aged for one year, resulting in fruity sharp flavors and a creamy yet crumbly texture. Great with apples and cured meat, or melted on a sandwich.

Since 1980, Shelburne Farms has made an artisanal, Vermont cheddar, using only the raw milk from our pasture-raised herd of Brown Swiss cows. Their cheesemakers craft about 170,000 pounds of cheddar annually, which keeps the ‘farm’ in Shelburne Farms.
