2 time world champion cheesemaker Michael Spycher produces traditional Le Gruyere AOP using milk sourced from within 4 kilometers of his facility, Fritzenhaus Dairy in Switzerland. This Gruyere Surchoix, aged for a minimum of 12 months, has a slightly crumbly texture and a complex flavor with notes of stone fruit, brown butter, boiled ham, chestnuts, and vanilla. You may even encounter some of those beloved crunchy tyrosine crystals! This is the real deal—perfect for cooking and melting, but unique enough for snacking.
