The cheese program at Greene Grape Provisions is one of the most reputable in NYC, boasting over 250 unique cheeses and charcuterie items from all over the world. Our approach to selling cheese is to offer our customers the best quality artisan products, in an approachable and educational environment that is welcoming to everyone. Our sourcing practices emphasize “real” cheeses that are a true expression of their environment, and promote products that are in line with the Slow Food tenets of “good, clean, and fair”. Our cheese case is composed mostly of American artisanal cheeses, supplemented by a curated selection of iconic European cheeses. We offer training that highlights the unique history of each cheese, and the importance of respecting the product through proper cutting techniques, regular case maintenance, and daily cheese care. The ideal Assistant Cheese Manager & Beer Buyer is passionate about beer, cheese and charcuterie. They have a strong work ethic and desire to learn, with exceptional customer service & organizational skills, and is able to multi-task under pressure. They are also able to manage a small staff, and pay very close attention to detail. The Assistant Cheese Manager & Beer Buyer reports directly to the Cheese Department Manager as well as any Manager on duty.

Key Responsibilities

  • Source & order beer, cider, etc. from local vendors, developing relationships with them to negotiate a fair price
  • Place weekly beer/beverage orders, taking into account anything that may affect demand
  • Meet and exceed sales goals as decided upon by the Cheese Department Manager and Director of Operations
  • Maintain the display case, keeping product fully stocked & rotating products to keep customers interested 
  • Set appropriate beer/beverage pricing and margins 
  • Manage beer inventory and details for website 
  • Order other cheese products as agreed upon with the Cheese Department Manager
  • Maintain refrigerated and dry storage areas to keep clean and in good working order
  • Cut and wrap cheese and charcuterie to order at counter, for grab & go case, online sales & catering orders
  • Pack out and stock all cheeses, jams, honeys, dried fruits, nuts and other accoutrements
  • Make fresh mozzarella daily for Prepared Foods Department as well as for retail sale
  • Keep all cases fully stocked and abundant, using FIFO
  • Perform daily quality control on all products, keeping them attractive and in good condition
  • Accurately receive and record department deliveries, promptly communicating any problems to vendors
  • Maintain accurate and attractive signage for all items
  • Communicate with Cheese Department Manager for all equipment needs
  • Assist with accurate and timely quarterly inventory counts as designated by General Manager
  • Attend annual all staff meeting as well as any staff classes or tastings of new products
  • Assist in training and management of mongers to ensure counter standards are being met 
  • Work as a team with other departments and counters to provide assistance when needed
  • Maintain food safety and sanitation standards as defined by both the handbook and by the DOA
  • Demonstrate outstanding customer service to every customer with in-depth knowledge of all department products, and contribute to a positive work environment

Requirements

  • Passion for beer, cider, cheese and charcuterie with a focus on excellent customer service 
  • Ability to stand for extended periods of time, walk up/down stairs, use hand truck, and lift up to 50 lbs unassisted
  • Detail oriented with an ability to multitask under pressure
  • Flexible availability including nights, weekends and holidays
  • A strong work ethic & positive attitude with a desire to taste and learn!
  • 2+ years experience working at a cheese counter, management experience preferred
  • Proof of Covid-19 vaccination
