Our meat & seafood department practices whole animal butchery and sustainable fishery. Our animals are grass fed and pasture raised. The farms we work with are chosen based on quality, commitment to regenerative agriculture, and humane handling practices. We believe that locality and quality go hand in hand- from pasture to Provisions; the entire supply chain is no more than 300 miles long. We work with farmers in NJ, NY, PA & VT. When it comes to fish there’s no fishy business here! We believe that a sustainable seafood system depends on well-informed consumers and responsible purveyors. 

The Meat & Seafood Department Manager is responsible for all products and services available at the meat department service counter, including but not limited to: Customer service, educating customers about available products and making recommendations for how to cook them; and USDA and DOA regulations, training and managing butchers, as well as ordering and managing inventory and costs related to the department. The ideal candidate is passionate and knowledgeable about whole animal butchery, sustainable agriculture and farming, possesses rigorous attention to detail and can demonstrate mastery of basic cooking skills.

Key Responsibilities

  • Source product from vendors, negotiating price & maintaining highest quality product available 
  • Manage all Department needs, taking into account seasonal and holiday offerings
  • Train and manage team of butchers in breaking down whole steer, pigs & lamb into retail cuts
  • Meet and exceed quarterly and yearly sales goals for the Meat & Seafood Department
  • Update POS with correct item and pricing, including ingredients when necessary
  • Work with Marketing Department to create and maintain accurate signage for all items sold in the Department
  • Manage Meat and Seafood inventory stock and details for all online sales platforms
  • Maintain all sales cases, rotating products for quality assurance and attractiveness of display 
  • Receive and record all deliveries, promptly communicating any problems to vendors
  • Maintain refrigerated and dry storage areas area to be clean and in good working order 
  • Perform daily quality control on all products, keeping them attractive and in good condition
  • Make sure all equipment is in good working order, and communicating with GM to solve any equipment problems in order to ensure staff safety at all times
  • Perform accurate and timely quarterly inventory counts as designated by Director of Operations
  • Create and edit weekly Department schedule as needed, remaining up to date on last minute changes
  • Manage all hiring and training needs for the Department and work with DOO to address any HR Department needs
  • Keep waste to a minimum, and work with Kitchen/Deli to utilize waste as efficiently as possible
  • Work closely with the Kitchen and Deli on special projects as directed by the DOO
  • Fulfill special order requests from customers to the best of our abilities
  • Keep track of competitors’ offerings and adjust products and pricing as dictated by market trends
  • Work directly with the Marketing Department to create content for social media
  • Provide knowledge of food preparation and cookery of department products to customers and staff
  • Participate in regular inventory counts
  • Ensure storage areas and display cases are clean and all department equipment is in working order
  • Properly distribute unsellable items to the kitchen
  • Keep all cases fully stocked and abundant, considering appearance, variety and merchandising ease of shopping and stocking, as well as reducing waste using FIFO
  • Attend annual all staff meeting as well as any staff classes or tastings of new products
  • Maintain accurate and attractive signage for all items
  • Work as a team with other departments and counters to provide assistance when needed
  • Maintain food safety and sanitation standards as defined by both the handbook and by the DOA
  • Demonstrate outstanding customer service to every customer and contribute to a positive work environment

Requirements

  • Minimum 1 year experience in whole animal butchery
  • Ability to break down whole animals into retail cuts
  • Passion for quality foods
  • Ability to stand for extended periods of time, walk up/down stairs, use hand truck, and lift up to 80 lbs unassisted
  • Detail oriented with an ability to multitask under pressure
  • Flexible availability including nights, weekends and holiday
  • A strong work ethic & positive attitude with a desire to taste and learn!
  • Ability to engage affably with customers and recommend alternative cuts
  • 2+ years experience managing in a retail environment, buying experience preferred
  • Proof of Covid-19 vaccination
