L'Etivaz is known as "heritage recipe Gruyere," because it is the cheese that modern Gruyere was based upon! In order to preserve the ancient recipe, local cheesemakers formed a cooperative in 1932 and named it L'Etivaz to pay homage to a village that was central to them all. L'Etivaz is an "alpage" cheese, meaning it is made from the raw milk of cows that graze in the Alps during the summer months and therefore produce a depth of flavor that is unparallelled - this cheese tastes of hazelnuts, savory broth, leeks, baked ham, and toffee. This is a both a rare cheese and an unforgettable flavor experience!
