Ubriaco, meaning "drunk" in Italian, is a nod to the fact that this cheese is quite literally drunk—this cow's milk cheese from the Veneto region of Italy is soaked in La Jara Pinot Grigio rosé, a dry, elegant sparkling wine before being coated with gorgeous pink rose petals. A freshly cut piece of Ubriaco Pinot Rosé fills the nose with aromas of fruit and flowers. This cheese has a firm texture and slight bite to it, with an almost effervescent, light and sweet flavor.
